Ibérico Secreto, Like Iberico Pluma, is another cut from the pigs tenderloin, but it’s hidden between the shoulder and the back of the pig, near the ribs. It’s name, Secreto, means “secret” in Spanish, is something we should think carefully about. The Iberico butchers historically kept it for themselves because of its incredible quality and flavour – thus, being a trade secret.
Typically, the Iberico Secreto is thin and flat, with a wonderful marbling of fat – for that extra flavour and will render into the perfect sear (& crispy edges). It has a deep rich flavour from the pigs that gorge themselves on acorns during the montanera seasons.
How do I cook my Secreto Iberico?
Secreto is best cooked quickly over high heat, like on a grill or cast iron pan, to medium-rare. The natural fat melts during cooking, creating a juicy, flavorful bite with a slight crispiness on the edges.
For the best and delicious results – and as is traditional – the Secreto should be grilled over an open fire at a very high heat. If however, you do not have a grill, it is also possible to cool the pork to a medium-rare in a pan with butter, garlic and rosemary. Allow the pork fat to render around the edges for some crispy edges. While most other pork in the UK should be cooked to well done, the quality of the meat, and the way the animals are slaughtered and farmed, means this joint does not need as much cooking. Best served medium-rare!
