Pluma IbĂ©rica is prized! The Pluma cut of pork found at the front of the pig’s tenderloin, over the shoulder blade. Its name Pluma is derived from “feather” in Spanish, in honour of the cut’s shape. Typically, the Iberico Pluma is thin, triangular, and slightly flat, with a wonderful marbling of fat – for that extra flavour and will render into the perfect sear.
Pluma IbĂ©rica is most often cooked quickly on a grill, but can also be seared in a pan to medium-rare to preserve its tenderness and flavor. It’s a highly sought-after delicacy in Spanish cuisine, often featured in fine dining restaurants. It is rarely seen in the UK. Alongside the Secreto and Presa – Iberico Pluma is among the 3 most popular cuts of Iberico Pork.
The flavour and texture of this pork will be unlike anything that has touched your lips before – unless you’ve been lucky enough to enjoy it yourself. It has a soft, tender texture, with a luxurious mouth-feel. The flavour comes from the fat, and as all Iberico pork, has a sweet and nutty touch to the salty delicious meat.
How do I cook my Pluma Iberica?
For the most delicious results – and as is traditional – the Pluma should be grilled over an open fire. If however, you do not have a grill, it is also possible to cool the pork to a medium-rare in a pan with butter, garlic and rosemary. While most other pork in the UK should be cooked to well done, the quality of the meat, and the way the animals are slaughtered and farmed, means this joint does not need as much cooking. Best served medium-rare!
